baked peach hand pies

ingredients:

*yields 8-12 hand pies*

2 peaches, chopped into small pieces

1/4 tsp of warm spice mix

1/2 tbsp of brown sugar

2 pre-made pie crusts (usually come 2 to a pack/box)

a 5-inch biscuit cutter, cookie cutter, or a wide rimmed glass

egg wash - (1 raw egg mixed with 1 tbsp of water)

other:

sheet pan(s)

aluminum foil or parchment paper

non-stick spray

directions:

preheat your oven to 350. in a bowl, mix the chopped peaches, warm spice mix, and brown sugar. set aside. open and unroll your pie dough. cut circles with your cutting utensil. you should get 4-6 circles per pie dough (you may have to re-roll the leftover crust after you cut the first circles). next, put a small spoon full of the peach mixture on one side of the dough, and fold the other side over the filling. roll the edges together so the hand pie is closed. repeat until all your hand pies are made with both pie crusts. line your sheet pan(s) with foil or parchment paper, and spray with non-stick spray. place your hand pies on the pans and brush the tops lightly with the egg wash (you may not use all the egg wash). bake the hand pies for 20-25 minutes, or until golden brown. serve warm or at room temperature. enjoy!

note: you can use any type of fruit in the hand pies.
