ingredients:

2 cups of flour

1/2 cup of unsweetened cocoa powder

1-1/4 tsp of baking soda

1/2 tsp of salt

1 cup of brown sugar

1/2 cup of melted coconut oil, room temperature

2 eggs, room temperature

1/2 cup of milk, room temperature

1/2 cup of greek yogurt, room temperature

1 tsp of pure vanilla extract

1-1/4 cup of semi sweet chocolate chips

other:

non-stick spray (coconut oil or butter flavor)

12 muffin liners

12 cup muffin tin

directions:

preheat your oven to 400 degrees. place cupcake liners in the muffin tin, and lightly spray the liners with non-stick spray. set aside. in a bowl, mix all the dry ingredients (flour, cocoa powder, baking soda, and salt) with a whisk or mixer. in a separate bowl, mix the brown sugar coconut oil together well. add in the eggs, milk, greek yogurt, and vanilla extract, and mix until combined. add the wet ingredients to the dry ingredients and mix until just combined. fold in 1 cup of the chocolate chips, and divide the batter into the muffin tin. top each muffin with the remaining chocolate chips. bake for about 18minutes. serve warm or at room temperature. enjoy!
