lemon bars
Ingredients:
1/2 cup of fresh lemon juice
1 can of sweetened condensed milk
2 egg yolks
1 cup of graham cracker crumbs
6 tbsp of melted butter
1/4 cup of granulated sugar
1/2 cup of powdered sugar, optional
8x8 square glass pan
Directions:
Preheat your oven to 350. In a bowl, mix graham cracker crumbs, melted butter, and granulated sugar. Spray the bottom of your glass dish with non-stick spray, then press the graham cracker mix into bottom of the glass pan and bake for about 15 minutes. Let the crust cool completely. when the crust is cooled, re-preheat your oven (if you turned it off), and prepare the filling. In another bowl, whisk together the lemon juice, sweetened condensed milk, and egg yolks. Pour over the cooked crust and bake for about 20 minutes. Let cool on the counter for about 30 minutes, then chill in the refrigerator for at least an hour before cutting. Sprinkle the top of the bars with powdered sugar, if desired, before cutting. Depending how you cut these, you can make 9-12 bars. Best eaten chilled. Enjoy!
Note: You can buy graham cracker cookies and crumble them yourself or buy the crumbs from the store! also, for extra lemon taste, add the zest of one lemon.
