snickerdoodle cookies
ingredients:
1 cup (2 sticks) of butter, softened
3/4 cups of white sugar
1/2 cup of brown sugar
1 egg plus 1 egg yolk, room temperature
2 teaspoons Vanilla
2-3/4 cups of flour
1-1/2 tsps of cream of tartar
1 tsp of baking soda
1/2 tsp of salt
1 tsp of cinnamon
cinnamon sugar mixture: 1/2 cup of white sugar + 2 tbps of cinnamon
supplies:
3 mixing bowls
stand or hand mixer
cookie sheet
parchment paper
wire rack
directions:
preheat oven to 350 degrees. in a mixing bowl, cream butter and sugars for about 5 minutes until light and fluffy. next, add the eggs and vanilla. mix for an additional 1-2 minutes.
in another bowl, mix together the flour, cream of tartar, baking soda, and salt. add into the wet ingredients and mix until combined. in a separate bowl, mix up the cinnamon sugar mixture.
using a cookie scoop or spoon, grab a couple tablespoons of dough and roll into small balls until round and smooth. drop into the cinnamon sugar mixture and coat well, ensuring the cookie balls are completely covered.
place on a parchment lined cookie sheet, and slightly press down in the center of the ball before placing in the oven. bake for about 10-12 minutes then cool on the cookie sheet for a couple minutes. move to a wire rack to cool completely or serve warm.
