ginger snickerdoodle cookies
ingredients:
cookies:
1/2 cup butter softened
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 egg
1 tsp of vanilla extract
1/4 cup molasses
1/2 tsp of cinnamon
1/8 tsp of cloves
1/8 tsp of nutmeg
1/2 tsp of ground ginger
1/2 tsp of salt
2 cups of all purpose flour
1 tsp of baking soda
ginger cinnamon sugar mix:
1/2 cup granulated sugar
2 teaspoons cinnamon
2 teaspoons ginger
pinch salt
supplies:
stand or hand mixer
2 mixing bowls
2 tbsp cookie scoop
parchment lined cookie sheet
wire rack
directions:
preheat the oven to 350 degrees.
in a stand mixer or with a hand mixer, cream the butter and sugars together until fluffy, about 2 minutes. add in the egg, vanilla, and molasses and continue to mix for about 1-2 minutes or until the mix turns a light brown color.
in a separate bowl, mix the remaining cookie ingredients (dry ingredients). add into the wet ingredients and mix until just combined.
in a small bowl, mix the ingredients for the ginger cinnamon sugar mix. use a cookie scoop to scoop out some of the dough, and form it into a ball. Roll it around in the ginger cinnamon sugar mix to coat in. place the cookies on parchment lined cookie sheet about 2 inches apart. this makes about 28 cookies.
bake the cookies for 7-9 minutes or until outside looks cooked but inside is still soft and gooey. then cool for 5 minutes on the cookie sheet before transferring to a wire rack to cool.
