copycat doubletree hotel cookies
ingredients:
1 cup (2 sticks) of Butter, melted
1 cup of Brown Sugar
1/2 cup of Sugar
2 Eggs
2 tsps of Vanilla
1/2 tsp of Lemon Juice
1/2 cup of Rolled or old fashioned Oats, ground fine
2-1/4 cup of all purpose Flour
1 tsp of Baking Soda
1 tsp of Salt
2 cups of Mini Chocolate Chips
1-1/2 cups of Walnuts, chopped
supplies:
mixing bowl and spoon
food processor or blender
cookie scoop or spoons
2 sheet pans/cookie sheets lined with parchment
plastic wrap
directions:
in a bowl, mix the melted butter with the brown sugar and sugar and keep stirring until the mixture is smooth, about 2-3 minutes. next, Stir in the vanilla, lemon juice, and eggs. In food processor or blender, pulse the rolled/old fashioned oats until it is a fine powder. add to the mixture butter/sugar mixture. then, Stir in flour, baking soda, and salt until all combined. add in mini chocolate chips and walnuts. using a cookie scoop or spoons, scoop the dough into balls and onto a parchment lined sheet pan. you can put them close together like the pictures. depending the size of the balls you make, you can get 30 (larger) to 55 (smaller) cookies. cover the cookies with plastic wrap and chill in the fridge for 1 to 24 hours (I chilled my dough for 1 hour). once you make the balls and chill them, you can also freeze the dough and pull out the balls/individual cookies and just bake as few or many as you’d like.
when ready to bake, preheat the oven to 360 degrees. Remove the dough from refrigerator and shape into balls that match the size of the cookies you want to make, and put them onto a parchment lined cookie sheet. Bake the cookies for 11-13 minutes or until golden brown. let cool for 1-2 minutes on the cookie sheet, then cool until ready to eat on a wire rack. serve warm. enjoy!
