cinnamon oatmeal cookies
ingredients:
3 cups of all purpose flour
1 tsp of baking soda
1 tbsp of cinnamon
1/2 tsp of salt
1 cup (2 sticks) of butter, browned
2 cups of brown sugar
2 eggs, room temperature
2 tsps of pure vanilla extract
1-1/2 cups of old fashioned oats
flaky sea salt, optional
supplies:
mixing bowls
stand mixer or hand mixer
baking sheets
parchment paper
cookie scoop
cooling rack
directions:
preheat the oven to 350.
in a medium mixing bowl, combine the flour, baking powder, baking soda, cinnamon and salt, set aside.
in the bowl of a stand mixer fitted with a paddle attachment or a hand mixer, combine the butter and sugars. once mixed well, add in the eggs and vanilla. once mixed, add in the flour mixture and combine well. gently mix in the oats on low until fully incorporated.
line a baking sheet with parchment paper and using a cookie scoop or spoon, scoop the cookie dough onto the baking sheet. you will get about 24 medium sized cookies.
bake the cookies for 12 minutes or until golden brown; the cookies will still be soft in the middle. once out the oven, let the cookies cool for 3-4 minutes on the cookie sheet before transferring to a cooling rack to continue cooling.
