banana nut bread
Ingredients:
2 cups of flour
1 tsp of baking soda
1/2 tsp of cinnamon
1/4 tsp of salt
1/2 cup of brown sugar
1/2 cup of white sugar
3-4 ripe bananas, mashed
2 large egg
1/2 tsp of pure vanilla extract
1/4 cup of milk
1/2 cup of vegetable or canola oil
3/4 cup of walnuts, chopped
supplies:
2 mixing bowls and a mixing spoon
9x5 loaf pan
non-stick spray
wire rack
Directions:
Preheat oven to 350. In a bowl, mix flour, baking soda, cinnamon and salt. In a second bowl, mix the sugars, bananas, vanilla, milk, egg and oil. Then add to the dry ingredients and mix until just combined. gently fold in 1/2 cup of the walnuts to the batter, saving the remaining walnuts for for the top of the bread, if desired. spray the loaf pan with non-stick spray and Pour the batter in. top with remaining walnuts (optional). Bake for approximately 50 minutes to 1 hour or until a toothpick comes out clean. Cool the bread for about 10 minutes in the loaf pan, then transfer to a wire rack to cool at least 30 minutes before cutting.
Note: If you have nut allergies, you can remove the nuts from this recipe. also, This recipe can be made into muffins. use 1/2 cup of butter instead of oil, if desired. banana nut bread will last in the fridge for about 4 days, and can also be frozen.
