crockpot coconut tandoori chicken bowl
ingredients:
2 pounds of chicken breasts or thighs
2 tablespoons of honey
2 tablespoons of garam masala
1 tablespoon of chili powder
1 tablespoon of garlic powder
1 tablespoon of cumin
2 teaspoons of salt
2 teaspoons of turmeric
1/2 teaspoon of ground ginger
1/2 teaspoon of cayenne pepper
14 oz can of coconut milk
supplies:
crockpot/slow cooker
directions:
add all the ingredients to a crockpot, and cook for 4 hours on high, or 6 hours on low. once cooked, shred the chicken and serve with rice, cauliflower rice, or any other side of choice. to make as pictured, serve with jasmine rice, toasted pita bread, and cucumbers (soaked in vinegar, salt, and pepper).
