chipotle chicken tacos
ingredients:
chicken:
1lb of chicken breasts or tenderloins
1 - 7.5oz can of chipotle peppers in adobe sauce
1/2 tsp of Goya Adobe All Purpose Seasoning
1/4 tsp of cumin
1/4 tsp of garlic powder
1/4 tsp of pepper
1 tsp of Chulola Hot Sauce, optional
3 tbsp of chicken stock
tacos:
street taco size tortillas
1/2 white onion, small chopped
hand full of cilantro, chopped
juice of fresh limes
directions:
in a crockpot, combine all the ingredients to make the chicken. cook the chicken on high for 4 hours or on low for about 6 hours. the chicken is done when it easily shreds with your fork. when you’re ready to assemble your tacos, warm your tortillas via the oven on broil or on the stove. add a spoon full of chicken to the tortilla and top with onions, cilantro, and fresh lime juice. serve warm. enjoy!
*note: you can discard the peppers in the adobe sauce if you want to reduce the spice level. also, this recipe can easily be increased, which will increase the cooking time. chicken is cooked when it is no longer raw in the middle & shreds easily.
