blackened salmon
Ingredients:
1lb of Salmon, cut into filets/serving sizes
1/2 to 1 tbsp of Blackening seasoning
1tbsp of Olive oil
Cast iron pan
Directions:
Preheat your oven to 400 and begin to heat your cast iron pan over medium-high heat. while the stove and oven warm, prep your salmon. Using a paper towel, pat dry the salmon (so the seasoning will stick). Season the salmon with the blackening seasoning, rubbing it into the fish as you go. Once your cast iron pan is hot, drizzle with olive oil and place fish seasoned side down into the pan. Cook for about 2 minutes, or until you have a nice crust on the salmon. Flip the fish over, and move the cast To the oven. Bake until fish is throughly cooked, but not over cooked (salmon is over cooked when it starts to turn white on the sides). Depending how thick your piece of salmon is, this could take anywhere from 8-12 minutes. serve warm. Enjoy!
