sheet pan shrimp fajitas
Ingredients:
1/2 lb of large shrimp (31/40), peeled and deveined
1 red pepper, sliced into strips
1 green pepper, sliced into strips
1 yellow pepper, sliced into strips
1/2 red onion, sliced into strips
Juice of 1/2 a lime
Cilantro (optional)
Pepper
Mrs. Dash Table Blend Seasoning
Red pepper flakes
Olive oil
Directions:
Preheat oven to 400. On a sheet pan, drizzle olive oil. In a bowl, toss shrimp, peppers, and seasonings. Spread out onto the sheet pan, and roast in the oven for about 10-12 minutes, or until shrimp are cooked through. When you take the shrimp out the oven, immediately squeeze the lime juice over the sheet pan. Top with cilantro (optional). Serve alone, with tortilla, rice, or whatever side you'd like. Enjoy!
