roasted pears with greek yogurt and walnuts
ingredients:
walnuts:
8 oz of chopped walnuts
1 tbsp of butter
1/4 cup of pure maple syrup or raw honey
pears:
3 tbsps of butter
1/4 cup of honey
5 ripe pears, cored and sliced
1 tbsp of fresh grated ginger
1/2 tbsp of warm spice mix or cinnamon
pinch of salt
greek yogurt:
2 cups of plain greek yogurt
1/4 tsp of pure vanilla extract
1/4 tsp of warm spice mix or vanilla
supplies:
cast iron skillet
spatula
storage container
mixing bowl
directions:
walnuts: over medium high heat on your stove, heat all the ingredients for the walnuts in a cast iron skillet. stir and cook together for about 5 minutes or until slightly toasted but warm and sticky. next, pour/scoop the walnuts into a storage container and set aside until ready to assemble. do not clean out the cast iron skillet you used.
pears: preheat your oven to 400. in the same skillet you used for the walnuts, melt the butter and honey together over medium heat, stirring to combine. next, add the remaining ingredients for the pears and stir well. let the pears cook for about 2 minutes, ensuring they are covered in the butter and honey. carefully move the cast iron skillet to the oven, and roast the pears for 30-35 minutes. once cooked, let the pears cool for a couple of minutes before serving.
greek yogurt: in a bowl, mix the greek yogurt, vanilla, and warm spice mix/cinnamon together well. keep chilled until ready to serve the pears.
to assemble: layer the walnuts, roasted pears and greek yogurt like a parfait, or serve in a bowl as shown in the picture.
*note: instead of greek yogurt, the pears can be served with whipped cream, ice cream, or regular yogurt. also, any type of nuts can be used.
