honey teriyaki chicken meatballs
ingredients:
meatballs:
1lb of ground chicken
1 egg
1/2 cup of breadcrumbs
1 clove of garlic, minced fine
1 tbsp of honey teriyaki sauce (see recipe below)
salt and pepper, to taste
honey teriyaki sauce:
1 cup of store bought teriyaki sauce
1/4 cup of honey
1/2 tbsp of crushed red pepper
supplies:
mixing bowls
spoon
non stick spray
sheet pan lined with aluminum foil
non-stick skillet/pan
directions:
preheat oven to 400. in a bowl, mix the ingredients to the honey teriyaki sauce and set aside. next, combine all the ingredients for the meatballs well. using a spoon, scoop some of the chicken mixture into your hands and form meatballs. once formed, place on a sheet pan lined with aluminum foil and sprayed with non-stick spray. the size of your meatballs with determine how many you get. after you form all the meatballs, bake them for 20-25 minutes, or until cooked through. smaller meatballs will take less time than bigger meatballs.
while the meatballs cook, warm the remaining sauce in a skillet/pan over medium heat. once the meatballs have cooked, add them to the skillet with the sauce, and toss to coat. continue to simmer the meatballs and sauce, if desired, to reduce the sauce. serve warm.
