cilantro-lime cauliflower rice bowl
ingredients:
1lb of shrimp, peeled and deveined
1 tbsp of salt-free blackening seasoning
4-5 bell peppers, any color(s) of your choice, chopped into strips
1 red onion, chopped into strips
1 package of steam-in-a-bag plain cauliflower rice
fresh cilantro
juice of 1/2 a lime
salt and pepper
olive oil
directions:
preheat your oven to 425. pay dry shrimp with a paper towel, and toss in a bowl with a drizzle of olive oil and salt-free blackening seasoning. then, lay on a foil-lined sheet pan, and bake in the oven for about 10 minutes or until cooked through. on the stove over medium heat, drizzle some olive oil in a pan and add peppers and onions. season lightly with salt and pepper. sauté peppers and onions until slightly charred. while the shrimp and peppers/onions cook, steam the cauliflower rice according to the package. let cook slightly for 2-3 minutes, then season to your taste with salt and pepper. add lime juice and cilantro (to taste). once everything is cooked, assemble your bowl with the cauliflower rice, shrimp, and sautéed peppers. enjoy!
*note: instead of peppers, you can add guacamole or avocado, salsa, or any other vegetable you want! the protein can be changed as well if you don’t want to eat shrimp.
