walnut chocolate chip pancakes
makes 5-6 medium sized pancakes (pictured)
ingredients:
3/4 cup of flour
1/4 cup of old fashioned oatmeal, ground fine
1 tsp of baking powder
2 tbsps of brown sugar
Pinch of salt
1/4 cup of chopped walnuts
1/4 cup of mini chocolate chips
1 tsp of vanilla
2 tbsps of butter, melted
3/4 cup of milk
1 egg
extra butter, for cooking with
supplies:
2 bowls and mixing sppons
non-stick pan or griddle
directions:
in a bowl, mix all the dry ingredients, including the walnuts and mini chocolate chips. in another bowl, mix the wet ingredients. combine the wet ingredients with the dry ingredients, mixing well. heat a non-stick pan or griddle to medium heat. when the pan is hot, add about 1/2 tbsp of butter and let it melt. once melted, make the pancakes, using a little less than 1/4 cup of batter per pancake. add butter as needed to the pan as the pancakes cook. pancakes are ready to flip when bubble appear on the top in the batter - if the pan or griddle is properly heated, it should take about 90 seconds. repeat until all the batter is gone. serve warm with pure maple syrup, if desired.
